  • 2 cups Sugar
  • 1 cup Heavy Cream
  • ½ cup Milk
  • ¼ tsp Salt

Peanut Nougat

  • 1 Egg White, room temperature
  • 1½ cups Sugar
  • 1 cup Corn Syrup
  • ½ cup Water
  • ½ cup Peanut Butter
  • ½ tsp Vanilla Extract

Chocolate Coating

  • 500 g Semi-Sweet Chocolate

Instructions

  1. Prepare Caramel: In a medium saucepan, combine sugar, heavy cream, milk, and salt. Cook over medium heat, stirring constantly until the sugar dissolves. Bring to a boil and cook until the mixture thickens and turns a deep golden caramel color. Remove from heat and stir in salted roasted peanuts evenly. Set aside to cool and thicken.
  2. Make Peanut Nougat: In a clean bowl, whip the egg white until stiff peaks form. In a separate saucepan, combine sugar, corn syrup, and water. Bring to a boil and cook the syrup to the soft-ball stage (about 240°F / 115°C) without stirring. Slowly pour the hot syrup into the whipped egg white while continuously beating to create a fluffy nougat. Immediately fold in peanut butter and vanilla extract until smooth and well combined.
  3. Assemble Bars: Line a baking pan with parchment paper. Spread the cooled caramel with peanuts evenly on the bottom. Next, layer the peanut nougat on top of the caramel and smooth out the surface. Chill in the refrigerator for about 30 minutes to firm up.
  4. Melt Chocolate: Chop the semi-sweet chocolate into small pieces and melt gently using a double boiler or microwave in short bursts, stirring frequently to avoid burning.
  5. Coat and Set: Remove the chilled caramel-nougat block from the fridge and cut into bars of desired size. Dip each bar into the melted chocolate, fully coating them. Place the coated bars on parchment paper and let them set at room temperature or in the refrigerator until the chocolate is firm.
