Instructions
- Prepare the Batter: In a large mixing bowl, combine the dry ingredients: all purpose flour, baking powder, ground cinnamon, salt, and brown sugar. In a separate bowl, whisk together the wet ingredients: eggs, vanilla extract, and milk until well blended. Gradually add the wet ingredients to the dry ingredients, stirring gently to combine into a thick batter.
- Add Apples: Fold the small cubes of peeled and cored Granny Smith apples into the batter, ensuring they are evenly coated but the mixture remains thick and chunky.
- Heat Oil for Frying: Pour vegetable oil into a wide skillet or frying pan to about ¼ inch depth and heat over medium heat until it reaches approximately 350°F (175°C) or when a small drop of batter sizzles and bubbles immediately when added.
- Fry the Fritters: Using a spoon, carefully drop scoops of batter with apples into the hot oil, frying several fritters at a time without crowding the pan. Fry each fritter for about 2-3 minutes per side, or until golden brown and cooked through. Use a slotted spoon to turn and remove the fritters, placing them on paper towels to drain excess oil.
- Make the Cinnamon Glaze: In a small bowl, combine the powdered sugar with 2 tablespoons of water, stirring until smooth and slightly thick. Add an additional tablespoon of water if needed to reach a drizzle-able consistency. Optionally stir in a pinch of ground cinnamon for extra flavor.
- Glaze and Serve: Drizzle the warm apple fritters with the cinnamon glaze and serve immediately for the best texture and flavor.
Notes
- Use Granny Smith apples for tartness which balances the sweetness of the glaze.
- Maintain the oil temperature to avoid greasy fritters: too low will absorb oil, too high will burn exterior.
