Chicken Mixture

  • 1 ½ lbs raw boneless skinless chicken breasts
  • 2 large eggs
  • 1 tablespoon light mayonnaise
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon chopped fresh chives
  • 1 tablespoon chopped fresh basil
  • ½ teaspoon salt
  • ½ teaspoon garlic powder
  • ¼ teaspoon black pepper
  • ¼ teaspoon dried dill weed
  • ⅓ cup all-purpose flour
  • 4 oz shredded 2% milk Mozzarella cheese (about 1 cup)

  • 2 tablespoons olive oil

Instructions

  1. Prepare the Chicken: Place the chicken breasts into the bowl of your food processor and cover with the lid. Pulse a few times or turn on for a few seconds until the chicken breasts are finely diced. Alternatively, finely dice the breasts by hand if you do not have a food processor.
  2. Mix Ingredients: Transfer the finely diced chicken to a large mixing bowl and add the eggs, light mayonnaise, parsley, chives, basil, salt, garlic powder, black pepper, dried dill weed, flour, and shredded Mozzarella cheese. Stir until well combined. Use a ¼ cup measuring cup to portion out 15 equal piles of the chicken mixture.
  3. Heat the Oil: Add a tablespoon of olive oil to a large sauté pan, skillet, or griddle pan and heat over medium heat until hot.
  4. Cook First Batch: Place half of the chicken piles into the pan, making sure they aren’t crowded or touching. Use the back of a spoon or spatula to gently press down each pile into a flat patty. Cook for 3-4 minutes until the bottoms are golden, then flip and cook the other side for another 3-4 minutes until fully cooked through. Remove cooked fritters to a serving plate.
  5. Cook Second Batch: Add the remaining tablespoon of olive oil to the pan and cook the remaining fritters the same way. Note the second batch may cook slightly faster. Transfer them to the serving plate when done.
  6. Serve: Serve the fritters warm as a tasty main dish or appetizer.

  • Ensure the chicken is thoroughly cooked to an internal temperature of 165°F (74°C) before serving.
  • For a lower fat alternative, you can use non-stick spray instead of olive oil, but the olive oil enhances flavor and texture.
