  • 100 g (3/4 cup) almond meal (ground almonds)
  • 1/2 teaspoon fine salt

Instructions

  1. Prepare the dough: In a mixing bowl, cream the softened unsalted butter together with the icing sugar until the mixture is light and fluffy. This ensures a smooth base for the cookie dough.
  2. Add wet ingredients: Beat in the egg yolks and vanilla extract until fully incorporated, enhancing the dough’s richness and flavor.
  3. Combine dry ingredients: In a separate bowl, whisk together the plain flour, almond meal, and fine salt to evenly distribute the dry ingredients.
