  • 12 whole eggs

Filling

  • 2 whole avocados
  • 3 tablespoons light mayo
  • 2 tablespoons Dijon mustard
  • 1 teaspoon garlic salt
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Food Coloring

  • 3 drops green food coloring
  • 15 drops red food coloring
  • 15 drops blue food coloring

Instructions

  1. Boil the Eggs:
    Place the 12 whole eggs in a large pot and cover with cold water. Bring to a boil over medium-high heat. Once boiling, reduce heat to low and simmer for 10 minutes. Remove from heat and cool the eggs in ice water for 5 minutes to stop cooking.
  2. Peel and Halve Eggs:
    Carefully peel the cooled eggs and slice each egg in half lengthwise. Remove the yolks and place them in a mixing bowl.
  3. Prepare the Filling:
    Add 2 whole avocados, 3 tablespoons light mayo, 2 tablespoons Dijon mustard, 1 teaspoon garlic salt, ½ teaspoon salt, and ½ teaspoon black pepper to the bowl with the yolks. Mash and mix well until smooth and creamy.
  4. Divide and Color the Filling:
    Divide the avocado-yolk mixture into three equal portions. Add 3 drops green food coloring to one portion and mix thoroughly to achieve a green tint. Add 15 drops red food coloring to the second portion and mix well to create a red filling. Add 15 drops blue food coloring to the third portion and mix to get a blue filling.
  5. Fill the Egg Whites:
    Using a spoon or piping bag, fill each egg white half with one of the colored avocado-yolk mixtures, creating a spooky, colorful feast for the eyes.
  6. Chill and Serve:
    Place the filled eggs on a serving platter and refrigerate for at least 30 minutes before serving to allow flavors to meld and the filling to firm up.
