Description

A wholesome and flavorful Ground Turkey Sweet Potato Skillet featuring tender extra-lean turkey, sweet diced potatoes, and vibrant vegetables, all cooked together in a single pan and topped with melted mozzarella cheese for a satisfying, nutritious meal.

Ingredients

Scale

Protein and Vegetables

  • 2 tablespoons extra virgin olive oil
  • 1 pound free-range extra-lean ground turkey
  • 1 teaspoon garlic clove, minced
  • ½ cup onions, diced
  • ½ cup yellow pepper, diced
  • 1½ cups sweet potato, diced

Seasonings and Cheese

  • Salt to taste
  • Freshly ground black pepper to taste
  • A pinch of red chili flakes (optional)
  • ½ cup shredded mozzarella cheese
  • Fresh parsley for garnishing

Instructions

  1. Prepare the sweet potatoes: Peel and dice the sweet potatoes into small, even cubes to ensure they cook evenly and quickly in the skillet.
  2. Sauté the aromatics: Heat the extra virgin olive oil in a large skillet over medium heat. Add the minced garlic, diced onions, and yellow pepper. Cook for 3-4 minutes until the onions become translucent and the peppers soften.
  3. Cook the ground turkey: Add the ground turkey to the skillet with the vegetables. Using a spatula, break up the meat and cook until it is no longer pink, approximately 6-8 minutes. Season with salt, freshly ground black pepper, and a pinch of red chili flakes if desired.
  4. Add the sweet potatoes: Stir in the diced sweet potatoes with the turkey and vegetables. Cover the skillet and reduce the heat to medium-low. Cook for 10-12 minutes, stirring occasionally, until the sweet potatoes are tender and cooked through.
  5. Top with cheese and garnish: Sprinkle the shredded mozzarella cheese evenly over the skillet contents. Cover the skillet and cook for another 2-3 minutes until the cheese melts. Garnish with fresh parsley before serving.

Notes

  • You can substitute mozzarella cheese with cheddar or pepper jack for a different flavor profile.
  • For a spicier dish, increase the amount of red chili flakes or add a dash of hot sauce.
  • Ensure sweet potatoes are cut uniformly to cook evenly with the other ingredients.
  • This skillet meal pairs well with a light green salad or steamed vegetables.
  • Leftovers can be refrigerated for up to 3 days and reheated gently on the stovetop or microwave.
