Description

These Greek Meatball Bowls with Lemon Rice & Feta Crumble are a flavorful Mediterranean-inspired dish. Juicy, herb-infused meatballs are paired with zesty lemon rice, fresh veggies, and tangy feta for a well-balanced, protein-packed meal.


Ingredients

  • 1 pound ground beef or lamb
  • 1/4 cup breadcrumbs
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tablespoon fresh oregano, chopped (or 1 teaspoon dried)
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 cup basmati rice
  • 2 cups chicken broth
  • 2 tablespoons lemon juice
  • 1 tablespoon lemon zest
  • 1 cup cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. In a large bowl, combine the ground beef or lamb, breadcrumbs, egg, garlic, oregano, cumin, salt, and pepper. Mix until just combined and shape into small meatballs.
  2. Heat olive oil in a skillet over medium heat. Cook the meatballs for 8–10 minutes, turning occasionally, until browned and cooked through. Remove and set aside.
  3. In a saucepan, bring the chicken broth to a boil. Stir in the rice, lemon juice, and lemon zest. Cover, reduce heat, and simmer for 15 minutes until rice is tender and liquid is absorbed.
  4. Fluff the rice with a fork and divide into serving bowls. Top with cooked meatballs, cucumber, cherry tomatoes, red onion, and crumbled feta.
  5. Garnish with fresh parsley and serve warm.

Notes

  • For extra flavor, add a dollop of tzatziki sauce on top.
  • You can use ground turkey or chicken as a leaner option.
  • Make the meatballs ahead and freeze for easy meal prep.
