- 1 pound ground beef or lamb
- 1/4 cup breadcrumbs
- 1 egg
- 2 cloves garlic, minced
- 1 tablespoon fresh oregano, chopped (or 1 teaspoon dried)
- 1 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- 1 cup basmati rice
- 2 cups chicken broth
- 2 tablespoons lemon juice
- 1 tablespoon lemon zest
- 1 cup cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- 1/2 cup feta cheese, crumbled
- 2 tablespoons fresh parsley, chopped
Instructions
- In a large bowl, combine the ground beef or lamb, breadcrumbs, egg, garlic, oregano, cumin, salt, and pepper. Mix until just combined and shape into small meatballs.
- Heat olive oil in a skillet over medium heat. Cook the meatballs for 8–10 minutes, turning occasionally, until browned and cooked through. Remove and set aside.
- In a saucepan, bring the chicken broth to a boil. Stir in the rice, lemon juice, and lemon zest. Cover, reduce heat, and simmer for 15 minutes until rice is tender and liquid is absorbed.
- Fluff the rice with a fork and divide into serving bowls. Top with cooked meatballs, cucumber, cherry tomatoes, red onion, and crumbled feta.
- Garnish with fresh parsley and serve warm.
Notes
- For extra flavor, add a dollop of tzatziki sauce on top.
- You can use ground turkey or chicken as a leaner option.
- Make the meatballs ahead and freeze for easy meal prep.
