Description

Goat’s Cheese, Dill and Onion Savoury Scones are fluffy, tender scones with a tangy bite from goat cheese, herby freshness from dill, and a mild sweetness from sautéed onions—perfect as a side, snack, or part of a brunch spread.


Ingredients

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup unsalted butter, cold and cubed
  • 1/2 cup goat’s cheese, crumbled
  • 1/4 cup fresh dill, finely chopped
  • 1/2 cup onion, finely diced and sautéed until soft
  • 3/4 cup buttermilk (plus more for brushing)
  • 1 egg (optional, for brushing)

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, baking powder, baking soda, salt, and pepper.
  3. Cut in the cold butter using a pastry cutter or fingertips until the mixture resembles coarse crumbs.
  4. Gently fold in goat’s cheese, sautéed onion, and dill.
  5. Add buttermilk and mix just until a dough forms—do not overmix.
  6. Turn dough onto a floured surface, gently pat into a 1-inch thick round, and cut into triangles or rounds.
  7. Place scones on prepared sheet. Brush with extra buttermilk or beaten egg for shine.
  8. Bake for 18–20 minutes or until golden and firm to the touch.
  9. Cool slightly on a wire rack before serving warm or at room temperature.

Notes

  • Use a fork or knife to crumble the goat cheese for even distribution.
  • Can substitute dill with chives or parsley if preferred.
