Description

Delightfully soft and fluffy gluten-free and vegan caramel doughnuts, coated with a luscious caramel glaze that’s completely plant-based and perfect for anyone avoiding gluten and animal products.


Ingredients

  • 1 1/2 cups gluten-free all-purpose flour blend
  • 1/2 cup coconut sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsweetened almond milk (or other plant milk)
  • 1/4 cup unsweetened applesauce
  • 1/4 cup melted coconut oil
  • 1 teaspoon vanilla extract
  • For the caramel glaze:
    1/2 cup coconut cream
    1/4 cup coconut sugar
    1 tablespoon maple syrup
    1 teaspoon vanilla extract
    Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C) and grease a doughnut pan.
  2. In a large bowl, whisk together gluten-free flour, coconut sugar, baking powder, baking soda, and salt.
  3. In another bowl, combine almond milk, applesauce, melted coconut oil, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Spoon the batter evenly into the doughnut pan cavities.
  6. Bake for 15–18 minutes or until a toothpick inserted comes out clean.
  7. Allow doughnuts to cool completely on a wire rack before glazing.
  8. To make the caramel glaze, heat coconut cream, coconut sugar, maple syrup, vanilla, and salt in a small saucepan over medium heat. Stir continuously until it thickens slightly, about 5–7 minutes. Let cool slightly.
  9. Dip the tops of the cooled doughnuts into the caramel glaze and place back on the rack to set.

Notes

  • Make sure to use a gluten-free flour blend with xanthan gum for best texture.
  • Store doughnuts in an airtight container in the fridge and consume within 3 days.
  • For a vegan option, ensure all ingredients including sugar and chocolate are vegan certified.
