Ingredients
Scale
- 1 pound large shrimp, peeled and deveined
- 2 cups broccoli florets
- 2 tablespoons olive oil
- 3 tablespoons butter, divided
- 4 cloves garlic, minced
- 1 1/2 cups dry orzo pasta
- 2 1/2 cups chicken or vegetable broth
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- 1/2 cup grated Parmesan cheese
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon lemon juice
Instructions
- Season the shrimp with salt, pepper, and red pepper flakes if using. Set aside.
- Heat olive oil and 1 tablespoon of butter in a large skillet over medium heat. Add the shrimp and cook for 2–3 minutes per side until pink and cooked through. Remove and set aside.
- Add the remaining butter and garlic to the skillet, cooking for 1 minute until fragrant. Stir in the orzo and toast for 1–2 minutes.
- Pour in the broth and bring to a boil. Reduce heat to low, cover, and simmer for 10 minutes, stirring occasionally.
- Add the broccoli and cook for another 5 minutes until the orzo is tender and the broccoli is bright green.
- Stir in the cooked shrimp, Parmesan cheese, parsley, and lemon juice. Serve warm.
Notes
- For extra richness, stir in a splash of heavy cream at the end.
- Use frozen broccoli if fresh isn’t available, adding it during the last 5 minutes of cooking.
- Substitute chicken for shrimp if desired.
