- 2 large chicken breasts, thinly sliced
- 3 tablespoons vegetable oil
- 4 cloves garlic, minced
- 2 cups broccoli florets
- 1 cup sliced mushrooms (button or cremini)
- 1/4 cup soy sauce
- 1 tablespoon oyster sauce (optional)
- 1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)
- 1 teaspoon sesame oil
- 1 teaspoon grated fresh ginger (optional)
- Salt and pepper to taste
- Cooked rice or noodles, for serving
Instructions
- Heat 2 tablespoons vegetable oil in a large skillet or wok over medium-high heat.
- Add sliced chicken and season with salt and pepper. Stir-fry until chicken is cooked through and lightly browned, about 5-6 minutes. Remove chicken from skillet and set aside.
- Add remaining 1 tablespoon vegetable oil to the skillet. Sauté minced garlic and grated ginger for about 30 seconds until fragrant.
- Add broccoli florets and sliced mushrooms. Stir-fry for 4-5 minutes until vegetables are tender-crisp.
- Return chicken to the skillet. Pour in soy sauce and oyster sauce (if using). Stir to combine.
- Add cornstarch slurry and stir continuously until sauce thickens and coats the chicken and vegetables, about 1-2 minutes.
- Drizzle sesame oil over the stir-fry and toss to combine.
- Serve hot over cooked rice or noodles.

- For extra heat, add sliced chili peppers or a dash of chili flakes.
- Substitute chicken with tofu or shrimp for variation.
