Description

Garlic Chicken Stir-Fry with Broccoli & Mushrooms is a quick and healthy meal featuring tender chicken pieces stir-fried with crisp broccoli and earthy mushrooms in a savory garlic sauce. This dish is perfect for busy weeknights and pairs well with steamed rice or noodles.


Ingredients

  • 2 large chicken breasts, thinly sliced
  • 3 tablespoons vegetable oil
  • 4 cloves garlic, minced
  • 2 cups broccoli florets
  • 1 cup sliced mushrooms (button or cremini)
  • 1/4 cup soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)
  • 1 teaspoon sesame oil
  • 1 teaspoon grated fresh ginger (optional)
  • Salt and pepper to taste
  • Cooked rice or noodles, for serving

Instructions

  1. Heat 2 tablespoons vegetable oil in a large skillet or wok over medium-high heat.
  2. Add sliced chicken and season with salt and pepper. Stir-fry until chicken is cooked through and lightly browned, about 5-6 minutes. Remove chicken from skillet and set aside.
  3. Add remaining 1 tablespoon vegetable oil to the skillet. Sauté minced garlic and grated ginger for about 30 seconds until fragrant.
  4. Add broccoli florets and sliced mushrooms. Stir-fry for 4-5 minutes until vegetables are tender-crisp.
  5. Return chicken to the skillet. Pour in soy sauce and oyster sauce (if using). Stir to combine.
  6. Add cornstarch slurry and stir continuously until sauce thickens and coats the chicken and vegetables, about 1-2 minutes.
  7. Drizzle sesame oil over the stir-fry and toss to combine.
  8. Serve hot over cooked rice or noodles.

Notes

  • For extra heat, add sliced chili peppers or a dash of chili flakes.
  • Substitute chicken with tofu or shrimp for variation.
  • Use low-sodium soy sauce to reduce salt intake.
