Description

Garlic Butter Steak Rigatoni is an easy, creamy pasta dish featuring tender seared sirloin or ribeye steak cubes tossed in a rich garlic butter and Parmesan cream sauce. Perfect for a comforting family dinner, this flavorful recipe combines perfectly cooked rigatoni with a luscious sauce and fresh parsley, with optional veggies like mushrooms or spinach to enhance the meal.

Ingredients

Scale

Pasta

  • 12 oz rigatoni

Steak and Seasoning

  • 1 lb sirloin or ribeye steak, cubed
  • Salt, to taste
  • Black pepper, to taste

Cooking Fats and Flavorings

  • 2 tbsp olive oil
  • 3 tbsp butter
  • 4 garlic cloves, minced

Sauce

  • 1 cup heavy cream
  • ¾ cup freshly grated Parmesan cheese

Finishing Touches

  • 2 tbsp chopped fresh parsley
  • Optional: sautéed mushrooms or spinach

Instructions

  1. Cook Rigatoni: Bring a large pot of salted water to a boil. Add the rigatoni and cook until just al dente. Reserve ½ cup of pasta water, then drain the pasta.
  2. Sear Steak: Heat olive oil in a large skillet over medium-high heat. Season the cubed steak with salt and black pepper. Sear the steak in two batches until browned and just cooked through, then remove to a plate and set aside.
  3. Cook Garlic: In the same skillet, melt the butter over medium heat. Add the minced garlic and cook for about 30 seconds until fragrant.
  4. Add Cream: Pour in the heavy cream while scraping the browned bits from the skillet. Let the cream simmer for 2 to 3 minutes until it thickens slightly.
  5. Incorporate Parmesan: Reduce the heat to low and stir in the grated Parmesan cheese until it melts completely and creates a smooth sauce. Adjust salt and pepper seasonings to taste.
  6. Toss Pasta in Sauce: Add the cooked rigatoni to the sauce, stirring gently to coat the pasta evenly. Use reserved pasta water to loosen the sauce if it becomes too thick.
  7. Finish with Steak and Parsley: Let the steak rest for 3 to 5 minutes, then add it back into the skillet with the pasta and sauce. Stir gently and sprinkle with chopped fresh parsley before serving.
  8. Serve: Serve the Garlic Butter Steak Rigatoni hot, optionally with bread or garlic butter green beans as a side. For a vegetable boost, add sautéed mushrooms or spinach before serving.

Notes

  • Use a microplane to grate Parmesan finely for smooth melting into the sauce.
  • Letting the steak rest before combining keeps it juicy and tender.
  • Reserve pasta water to adjust the sauce consistency if needed.
  • For extra vegetables, stir in sautéed mushrooms or spinach just before serving.
