- Prepare Potatoes: In a large skillet over medium heat, add 1 tbsp olive oil. Add the halved or quartered baby potatoes, season with salt and pepper, and cook for about 15-20 minutes, stirring occasionally until potatoes are tender and crispy on the edges.
- Cook Steak Bites: While potatoes cook, season the steak pieces generously with salt, pepper, dried thyme, and dried rosemary. Push potatoes to the side of the skillet or transfer to a plate temporarily.
