Potatoes

  • 1 lb baby potatoes, halved or quartered
  • Salt and pepper, to taste

Instructions

  1. Prepare Potatoes: In a large skillet over medium heat, add 1 tbsp olive oil. Add the halved or quartered baby potatoes, season with salt and pepper, and cook for about 15-20 minutes, stirring occasionally until potatoes are tender and crispy on the edges.
  2. Cook Steak Bites: While potatoes cook, season the steak pieces generously with salt, pepper, dried thyme, and dried rosemary. Push potatoes to the side of the skillet or transfer to a plate temporarily.
  3. Sauté Garlic and Steak: Add 2 tbsp butter to the skillet and let it melt. Add minced garlic and cook for 1 minute until fragrant. Then add the seasoned steak bites to the skillet. Cook for 3-4 minutes, stirring occasionally, until steak bites are cooked to your preferred doneness and have a nice sear.
  4. Combine and Finish: Return potatoes to the skillet if removed. Add the remaining 1 tbsp butter and stir everything together, allowing the butter and garlic to coat both the steak bites and potatoes evenly. Cook for an additional 1-2 minutes to blend flavors.
