- Berries of choice to top (e.g., strawberries, blueberries, raspberries)
Instructions
- Prepare the Granola Base: In a mixing bowl, combine oats and cinnamon. Add the almond butter, honey, and vanilla extract, mixing thoroughly until the mixture is evenly combined and sticky enough to hold its shape.
- Form the Cups: Press the granola mixture firmly into the bottoms and up the sides of a muffin tin or silicone muffin cups to create a cup shape. Ensure the base and walls are compact so they do not crumble apart.
- Freeze the Base: Place the granola-lined muffin tin in the freezer for at least 20-30 minutes to set and harden the cups.
- Add the Yogurt Filling: Once the granola cups are firm, spoon the Greek yogurt into each cup, filling them generously but leaving a little space for the berries.
- Top with Berries and Freeze: Arrange your choice of fresh berries on top of the yogurt. Return the filled cups to the freezer and freeze for an additional 1-2 hours or until the yogurt is fully frozen.
- Serve: Remove the frozen yogurt granola cups from the muffin tin, let them sit for a few minutes at room temperature to soften slightly, then enjoy immediately as a refreshing and healthy treat.
