This French Onion Chicken Bake combines caramelized onions, tender chicken breasts, and a cheesy topping for a comforting and flavorful meal. Enhanced with garlic, thyme, and balsamic vinegar, this baked dish brings the rich essence of classic French onion soup into an easy-to-make casserole perfect for weeknight dinners.

Ingredients

Scale

Onion Mixture

  • 4 Onions, peeled and sliced
  • 4 tbsp Butter
  • 4 cloves Garlic, minced
  • 1/2 tsp Pepper
  • 1 tsp Thyme
  • 2/3 cup Low Sodium Beef Broth
  • 2 tbsp Balsamic Vinegar

Chicken and Toppings

  • 4 Chicken Breasts, boneless skinless
  • 1/2 tsp Salt
  • 1 cup Mozzarella Cheese, shredded
  • 1/2 cup Parmesan Cheese, shredded

Instructions

  1. Preheat and Prepare Baking Dish: Preheat your oven to 400°F (200°C) and spray a 9×13 inch baking dish with cooking spray to prevent sticking.
  2. Cook Onions: Melt the butter in a large skillet over medium-high heat. Add the sliced onions and cook for about 5 minutes, stirring occasionally until they begin to soften.
  3. Add Seasonings: Reduce the heat to medium, then add minced garlic, pepper, and thyme to the skillet. Cook for an additional minute, stirring to combine flavors.
  4. Simmer Onions: Stir in the low sodium beef broth and balsamic vinegar. Continue cooking until the onions reach a jam-like, caramelized consistency, about 10 minutes.
  5. Layer Onions: Spoon about one-third of the caramelized onion mixture into the bottom of the prepared baking dish.
  6. Prepare Chicken: Place the chicken breasts on top of the onions in the dish and sprinkle evenly with salt.
  7. Add Remaining Mixture and Cheese: Spread the remaining caramelized onions over the chicken breasts. Then sprinkle shredded mozzarella and parmesan cheeses on top.
  8. Bake: Bake uncovered in the preheated oven for 30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the cheese is melted and golden.
  9. Serve: Remove from oven and serve warm. Enjoy your flavorful French Onion Chicken Bake!

Notes

  • If your chicken breasts are thick, consider cutting them in half diagonally to ensure even cooking.
  • Adjust the seasoning by adding more pepper or thyme according to your taste preferences.
