Description

Flavorful Herb Roasted Potatoes are crispy on the outside, tender on the inside, and infused with a delicious blend of fresh herbs and garlic. A perfect side dish for any meal.


Ingredients

  • 2 pounds baby potatoes, halved or quartered
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 teaspoons dried rosemary
  • 2 teaspoons dried thyme
  • 3 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, toss the potatoes with olive oil, salt, pepper, rosemary, thyme, and minced garlic until evenly coated.
  3. Spread the potatoes out in a single layer on the prepared baking sheet.
  4. Roast for 30–35 minutes, stirring halfway through, until golden brown and crispy on the edges.
  5. Remove from oven and sprinkle with fresh parsley if desired. Serve hot.
