- 2 pounds baby potatoes, halved or quartered
- 3 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 teaspoons dried rosemary
- 2 teaspoons dried thyme
- 3 cloves garlic, minced
- 2 tablespoons fresh parsley, chopped (optional)
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, toss the potatoes with olive oil, salt, pepper, rosemary, thyme, and minced garlic until evenly coated.
- Spread the potatoes out in a single layer on the prepared baking sheet.
- Roast for 30–35 minutes, stirring halfway through, until golden brown and crispy on the edges.
- Remove from oven and sprinkle with fresh parsley if desired. Serve hot.
Notes
- Use fresh herbs if available for more vibrant flavor.
- Try adding a pinch of paprika or chili flakes for a spicy kick.
- These potatoes reheat well in the oven or air fryer to retain crispiness.
