- 12 falafel (store-bought or homemade)
- 1 cup quinoa or couscous, cooked
- 1 cup cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- 1/2 cup crumbled feta cheese
- 2 tablespoons fresh parsley, chopped
- 1/4 cup tahini
- 2 tablespoons lemon juice
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 2–3 tablespoons water (to thin sauce)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- If using store-bought falafel, cook according to package instructions. If making homemade, prepare as desired.
- In a small bowl, whisk together tahini, lemon juice, olive oil, garlic, water, salt, and pepper until smooth. Adjust consistency with additional water if needed.
- Divide the cooked quinoa or couscous between bowls. Top with falafel, cucumber, cherry tomatoes, red onion, and feta cheese.
- Drizzle with the lemon tahini sauce and garnish with fresh parsley before serving.
Notes
- Swap quinoa with brown rice for more fiber.
- Add kalamata olives or roasted veggies for extra flavor.
