Description
The Enchirito is a Tex-Mex classic that combines the best of enchiladas and burritos—seasoned ground beef, refried beans, and melty cheese all wrapped in a soft flour tortilla and smothered in red enchilada sauce. It’s hearty, comforting, and easy to make at home.

- 1 lb ground beef
- 1 packet taco seasoning mix
- 1/2 cup water
- 1 can (15 oz) refried beans
- 6 large flour tortillas
- 2 cups shredded cheddar cheese
- 1 can (10 oz) red enchilada sauce
- 1/2 cup chopped onions (optional)
- Sour cream (optional, for serving)
- Sliced black olives or green onions (optional garnish)
Instructions
- Preheat oven to 375°F (190°C).
- In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
- Add taco seasoning and water to the beef, stirring to combine. Simmer for 5 minutes until thickened.
- Warm the refried beans in a saucepan or microwave until spreadable.
- To assemble, spread a layer of refried beans onto each tortilla, then top with seasoned beef and a sprinkle of cheese.
- Roll up each tortilla burrito-style and place seam-side down in a baking dish.
- Pour enchilada sauce over the top of the rolled tortillas and sprinkle with remaining cheese and onions if using.
- Bake uncovered for 20–25 minutes, until heated through and the cheese is melted and bubbly.
- Garnish with sour cream, black olives, or green onions if desired before serving.
Notes
- You can substitute ground turkey or chicken for the beef.
- Add jalapeños or hot sauce for a spicy kick.
- Leftovers can be stored in the fridge and reheated the next day for an easy meal.
