Ingredients
Scale
Meat and Aromatics
- 1½ pounds ground beef
- 1 large onion, diced finely
- 1 tablespoon minced garlic
Vegetables
- ½ cup carrots, peeled and finely shredded
- 16 ounces coleslaw mix
Oils and Sauces
- 2 tablespoons sesame oil
- 2 tablespoons vegetable oil
- ½ – ¾ cup low sodium soy sauce (approximately ½ cup used)
Seasonings
- ½ teaspoon onion powder
- ½ teaspoon garlic powder
- ½ teaspoon red pepper flakes
- 1½ teaspoon ground ginger
Garnish (Optional)
- Green onions for garnish
Instructions
- Cook the Ground Beef: In a large deep-sided skillet over medium heat, cook the ground beef until it is no longer pink, being careful not to break it into smaller pieces; keep the beef in larger chunks for better texture.
- Sauté Onions and Garlic: Drain excess grease from the skillet, return it to the stove, and add the diced onions and minced garlic. Cook until the onions are soft and translucent, maintaining the larger beef pieces.
- Add Oils and Vegetables: Stir in the sesame oil, shredded carrots, and coleslaw mix using tongs to combine everything evenly. Let this mixture cook for about 5 minutes to soften the vegetables slightly.
- Prepare and Add Seasoning Sauce: In a separate small bowl, combine onion powder, garlic powder, red pepper flakes, ground ginger, soy sauce, and vegetable oil. Pour this seasoning mixture over the beef and vegetable mixture in the skillet.
- Simmer to Blend Flavors: Reduce the heat and cook the combined mixture for about 5 more minutes, allowing the flavors to meld and the vegetables to become tender but still slightly crisp.
- Optional Garnish and Serve: Garnish with chopped green onions if desired, and serve hot, optionally alongside rice or as a low-carb dish on its own.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 4 days.
- Reheat on the stovetop over medium heat, stirring occasionally, or microwave in short bursts until warmed through.
- If serving with rice, store rice separately or mix it in before refrigerating.
- Add a splash of soy sauce when reheating to refresh the flavors.
