Ingredients

Scale

Wrap Ingredients

  • 1 pound grilled chicken breast, cut into strips
  • 6 whole wheat tortillas
  • Romaine lettuce leaves, as needed
  • 15 ounces black beans, drained and rinsed (1 can)
  • 8 ounces corn, drained (1 can)
  • 3/4 cup pico de gallo
  • 1 cup shredded cheddar cheese, lite or fat free
  • 1/3 cup lite mayonnaise

Instructions

  1. Prepare Chicken: Cut the grilled chicken breast into thin strips to make them easy to layer and eat inside the wraps.
  2. Assemble the Wraps: Lay one whole wheat tortilla flat on a clean surface. Place 1 to 2 romaine lettuce leaves onto the center of the tortilla. Evenly distribute 2 tablespoons of black beans, 1 tablespoon of drained corn, and 2 tablespoons of pico de gallo on top of the lettuce. Add a generous portion of chicken strips.
  3. Add Sauces and Cheese: Drizzle about one spoonful of lite mayonnaise over the fillings, then sprinkle 2 to 3 tablespoons of shredded cheddar cheese evenly across.
  4. Roll the Wrap: Carefully roll the tortilla up tightly, securing all the ingredients inside without spilling. Repeat the assembly and rolling process for all 6 tortillas.
  5. Serve: Just before serving, cut each rolled tortilla in half diagonally to create easy-to-handle wrap halves, and serve immediately to enjoy the fresh flavors.

Notes

  • Use lite mayonnaise or Miracle Whip to keep the wraps light and healthy.
  • Greek yogurt can be used as a creamy substitute for mayonnaise.
  • Whole wheat or low-carb tortillas help enhance the nutritional value.
  • Opt for canned corn for convenience or use freshly boiled corn if preferred.
  • Choose your favorite shredded cheese; fat-free versions are available to reduce calories.
  • If you prefer, swap out mayonnaise or yogurt for a Southwest-style dressing to vary flavor and calories.
