Description

This Easy Shrimp Vegetable Skillet is a quick and flavorful one-pan meal featuring tender shrimp seasoned with Cajun spices, sautéed alongside fresh zucchini and bell peppers. Perfect for a healthy weeknight dinner, this recipe combines vibrant vegetables with the rich taste of seasoned shrimp in just 25 minutes.

Ingredients

Scale

Shrimp Mixture

  • 1 pound shrimp
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • ½ tablespoon Cajun seasoning

Vegetables and Seasoning

  • 1 tablespoon olive oil
  • 1 tablespoon Cajun seasoning
  • 1 large zucchini, sliced
  • 2 bell peppers, cubed

Instructions

  1. Prepare the Shrimp: In a bowl, combine the shrimp with 1 tablespoon of olive oil, minced garlic, and ½ tablespoon of Cajun seasoning. Toss well to coat evenly and set aside to marinate.
  2. Cook the Vegetables: Heat the remaining 1 tablespoon of olive oil in a large pan over medium heat. Add 1 tablespoon of Cajun seasoning and stir briefly to release flavors. Add the sliced zucchini and cubed bell peppers and sauté for 4-5 minutes until they are tender-crisp. Remove the vegetables from the pan and set aside in a bowl.
  3. Cook the Shrimp: In the same pan, add the marinated shrimp and cook for about 5 minutes, stirring occasionally, until the shrimp turn pink and are cooked through.
  4. Combine and Finish: Return the cooked vegetables to the pan with the shrimp. Stir everything together and continue cooking for another 3-4 minutes until heated through. Serve immediately.

Notes

  • Adjust the Cajun seasoning to your spice preference; use less for milder flavor or more for extra heat.
  • You can substitute shrimp with other seafood or chicken if preferred.
  • Add fresh lemon juice or chopped parsley before serving for an added fresh kick.
  • Serve with rice, quinoa, or crusty bread for a complete meal.
