Shrimp and Sauce

  • 3 tbsp olive oil, divided
  • 1 lb wild caught jumbo shrimp, tails and shells removed
  • Salt and pepper, to taste
  • 8 garlic cloves, minced
  • Juice of 1 lemon
  • 2 tsp lemon zest
  • 2/3 cup dry white wine
  • 1 tsp lemon pepper
  • 1/2 tsp red chili flakes
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 2 tbsp minced parsley
  • 3 tbsp cold unsalted butter

Pasta

  • 1/2 lb angel hair pasta

Instructions

  1. Sauté the Shrimp: Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the shrimp seasoned with salt and pepper. Sauté each side for 1 to 2 minutes until the shrimp turn pink and are just cooked through. Be careful not to overcook. Remove the shrimp from the skillet and set aside.
  2. Cook the Garlic: Add the remaining olive oil to the same pan and add the minced garlic. Cook the garlic for about 30 seconds until fragrant, but do not brown it.
  3. Combine Shrimp and Garlic: Return the cooked shrimp to the pan, swirl to combine with the garlic oil, and then turn off the heat.
  4. Cook the Pasta: Bring a medium saucepan of salted water to a boil. Add the angel hair pasta and carefully swirl to submerge completely. Cook according to package instructions until al dente, then drain.
  5. Toss and Finish: Toss the cooked pasta with the shrimp mixture, lemon juice and zest, white wine, lemon pepper, red chili flakes, onion powder, garlic powder, parsley, and cold unsalted butter until the butter melts and forms a silky sauce coating everything evenly. Serve immediately.

Notes

  • To store leftovers, keep the pasta and sauce separate in airtight containers in the refrigerator for up to 5 days.
  • Shrimp cook very quickly, so avoid overcooking to maintain tenderness.
  • If the sauce dries out in the fridge, add a splash of olive oil or white wine when reheating to restore moisture.
