Ingredients

Scale

Sauce Ingredients

  • 2 tablespoons extra virgin olive oil
  • 1 medium onion, finely diced
  • 3 cloves garlic, minced
  • ⅓ cup tomato paste
  • 1 cup low-sodium chicken stock
  • 1 (15-ounce) can diced tomatoes
  • 1 tablespoon sugar
  • 1 teaspoon Italian seasoning
  • ¼ teaspoon salt
  • ¼ teaspoon ground black pepper
  • ⅓ cup heavy cream

Instructions

  1. Heat the olive oil. In a medium saucepan over medium heat, warm 2 tablespoons of extra virgin olive oil until shimmering.
  2. Sauté onions and garlic. Add the finely diced onion and minced garlic to the pan and cook for about 5 minutes, stirring frequently, until the onions are soft and translucent.
  3. Add tomato paste. Stir in ⅓ cup tomato paste and cook for 1-2 minutes to deepen the flavor.
  4. Pour in liquids and tomatoes. Add 1 cup low-sodium chicken stock and the entire 15-ounce can of diced tomatoes with their juices. Stir to combine.
  5. Season the sauce. Mix in 1 tablespoon sugar, 1 teaspoon Italian seasoning, ¼ teaspoon salt, and ¼ teaspoon ground black pepper.
  6. Simmer the sauce. Bring the mixture to a gentle boil, then reduce heat to low and let it simmer uncovered for 15 minutes, stirring occasionally to thicken the sauce and meld flavors.
  7. Finish with cream. Stir in ⅓ cup heavy cream and heat for an additional 2 minutes until the sauce is warmed through and creamy. Adjust seasoning to taste if needed.
  8. Serve. Pour the sauce over freshly cooked ravioli or your preferred pasta and enjoy immediately.

Notes

  • For a vegetarian version, substitute chicken stock with vegetable broth.
  • If you prefer a spicier sauce, add a pinch of red pepper flakes when sautéing the onions and garlic.
  • The sauce can be stored in an airtight container in the refrigerator for up to 3 days.
  • You can blend the sauce for a smoother texture if desired.
  • Use heavy cream for the richest flavor, but half-and-half can be substituted for a lighter version.
