This Easy Hobo Casserole is a comforting layered dish featuring seasoned ground beef, thinly sliced potatoes, and a creamy blend of mushroom and chicken soups topped with melted shredded cheese. Baked to perfection, it’s a hearty and satisfying meal perfect for family dinners.

Ingredients

Scale

Meat and Vegetables

  • 1 pound ground beef
  • 1 cup onion, diced
  • 1 tablespoon garlic, minced
  • 5 medium potatoes, thinly sliced

Seasonings

  • 1 teaspoon salt
  • 1 teaspoon black pepper

Soup and Dairy

  • 1 can (10.7 oz) condensed cream of mushroom soup (with or without garlic)
  • 1 can (10.7 oz) condensed cream of chicken soup
  • 1 can (12 oz) evaporated milk
  • ½ cup milk
  • 2 cups shredded cheese

Other

  • Cooking spray

Instructions

  1. Preheat and Prepare Pan: Heat the oven to 375°F (190°C). Spray a 9×13-inch baking dish with cooking spray to prevent sticking.
  2. Cook the Beef Mixture: In a large skillet over medium heat, cook the ground beef, diced onions, and minced garlic until the beef is no longer pink and the onions are softened. Drain any excess fat and season with salt and black pepper; set aside.
  3. Layer Potatoes and Beef: Place a layer of thinly sliced potatoes evenly over the bottom of the prepared pan. Then spread half of the cooked beef mixture evenly over the potatoes.
  4. Prepare Soup Mixture: In a bowl, whisk together the condensed cream of mushroom soup, condensed cream of chicken soup, evaporated milk, and regular milk until smooth. Pour half of this soup mixture over the beef layer, then sprinkle half of the shredded cheese evenly on top.
  5. Repeat Layers: Repeat layering with remaining potatoes, beef mixture, soup mixture, and finish by topping with the remaining shredded cheese.
  6. Cover with Foil: Tent a piece of aluminum foil over the baking dish, ensuring it does not touch the cheese to prevent sticking.
  7. Bake Covered: Bake in the preheated oven for 1 hour covered. Afterward, remove the foil and bake uncovered for an additional 30 minutes until the cheese is golden and bubbly.
  8. Rest and Serve: Remove the casserole from the oven and let it rest for 10 minutes on a wire rack before slicing to allow flavors to meld and make serving easier.

Notes

  • Slicing the Potatoes: Ensure potatoes are sliced thinly and uniformly to cook evenly throughout the casserole.
  • Let It Rest: Allow the casserole to rest for ten minutes before serving to enhance flavor melding.
  • Use Time-Savers: Use pre-chopped onions and minced garlic to reduce prep time.
  • Even Layers: Assemble the casserole with even layers of ground beef, potatoes, and cheese for the best texture and taste.
  • Cook Covered: Cover casserole with foil during baking to prevent the cheese from drying or burning, then uncover for the final golden top.
