This Easy Crockpot Beef Tips & Noodles recipe features tender, flavorful beef stew meat slow-cooked in a rich mushroom gravy, served over perfectly cooked egg noodles. With simple ingredients and minimal prep, it’s a comforting and hearty meal ideal for busy days.

Ingredients

Scale

Beef and Sauce

  • 2 pounds beef stew meat or chuck roast, cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • Salt to taste

Thickening Slurry (Optional)

  • 1 tablespoon cornstarch
  • 2 tablespoons cold water

Noodles and Garnish

  • 12 oz egg noodles, cooked separately
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the beef: Heat olive oil in a skillet over medium-high heat. Brown the beef cubes on all sides to seal in the flavor. This step enhances the richness of the final dish.
  2. Add aromatics: Add chopped onion and minced garlic to the skillet with the beef. Sauté for 2-3 minutes until onions are translucent and fragrant.
  3. Transfer to crockpot: Place the browned beef, onions, and garlic into the crockpot. Pour in beef broth and stir in the cream of mushroom soup, Worcestershire sauce, soy sauce, onion powder, garlic powder, black pepper, and salt to taste.
  4. Cook low and slow: Cover and cook on low setting for 6-8 hours or on high for 3-4 hours, until the beef is very tender and the flavors have melded.
  5. Prepare thickening slurry (optional): If you prefer a thicker gravy, mix the cornstarch with cold water in a small bowl until smooth.
  6. Thicken the gravy: About 30 minutes before serving, stir the cornstarch slurry into the crockpot. Cover and continue cooking until the sauce has thickened.
  7. Cook noodles: Meanwhile, cook egg noodles according to package instructions until al dente. Drain well and keep warm.
  8. Serve: Spoon beef tips and gravy over cooked egg noodles. Garnish with fresh chopped parsley for a pop of color and fresh flavor.

Notes

  • Browning the beef before slow cooking deepens the flavor but can be skipped for convenience.
  • Use low sodium soy sauce and beef broth to control salt levels.
  • To make this gluten-free, substitute cornstarch with a gluten-free thickener and use gluten-free soy sauce.
  • Leftovers store well in the refrigerator for up to 3 days and can be frozen for up to 3 months.
