Description
These Easter Egg Bird Nest Cookie Cups are a fun and festive treat perfect for celebrating springtime or Easter. Soft peanut butter cookie dough baked in mini muffin tins creates small cup-shaped cookies filled with Reese’s Peanut Butter Cups. Topped with creamy vanilla frosting and decorated with green and Easter-themed sprinkles, each cookie is finished by nestling three candy eggs on top, resembling a colorful bird’s nest.

- 24 Mini Reese’s Cups, unwrapped
- 1 (16 oz) can store-bought vanilla frosting
- Green sprinkles, for rolling the frosting
- Easter sprinkles, for decorating
- Cadbury Mini Eggs, for topping (3 per cookie)
Instructions
- Preheat Oven: Preheat your oven to 350 degrees Fahrenheit and spray a 24-count mini muffin pan with non-stick spray to prevent sticking.
- Form Cookie Cups: Roll each peanut butter cookie dough square into a ball and place one ball into each mini muffin cup, ensuring even distribution.
- Bake Cookies: Bake the cookie dough balls in the preheated oven for 12 minutes until they are golden and slightly puffed.
- Unwrap Fillings: While cookies bake, unwrap all the Mini Reese’s Cups so they are ready to be inserted.
- Add Reese’s Cups: Remove the cookie cups from the oven and immediately press one Mini Reese’s Cup into the center of each cookie while they are still warm to create the nest base.
- Cool: Allow the cookie cups to cool completely in the pan before attempting to remove them to maintain shape.
- Frost Cookies: Spread a generous layer of vanilla frosting on the top of each cooled cookie cup.
- Decorate: Roll the frosting-covered tops into green sprinkles to resemble grass, then sprinkle Easter-themed sprinkles on top.
- Finish with Candy Eggs: Press 3 Cadbury Mini Eggs gently into the frosting topping each cookie cup, completing the bird nest look.
Notes
- Spraying the muffin pan thoroughly is essential to easily remove the cookie cups without breaking.
- Press the Reese’s Cups into the warm cookies immediately so they embed properly as the cookies cool.
- Allow cookies to cool fully before frosting to prevent melting or sliding of the frosting.
- Use a spatula or butter knife to spread frosting evenly over the cookie tops.
- Store cookies in an airtight container at room temperature for up to 3 days to maintain freshness.
- For a nut-free version, substitute the peanut butter cookie dough and Reese’s Cups with allergen-friendly alternatives.
