Chicken Marinade
- 1 pound boneless chicken thighs or breasts, cut into bite-size pieces
- ¼ cup yogurt
- 2 tablespoons oil of choice
- 1 tablespoon lemon juice
- 3–4 cloves garlic, minced
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1 teaspoon salt
- ½ teaspoon garam masala
- ½ teaspoon fenugreek
- ½ teaspoon curry powder
- ½ teaspoon chili powder
- ½ teaspoon turmeric
- ½ teaspoon black pepper
Vegetables & Buns
- ½ onion, sliced or chopped
- ½ bell pepper, sliced or chopped
- 1 package slider buns (pack of 12)
- 1–2 cups shredded mozzarella cheese or cheese of choice
Sauces & Finishing
- ½ cup mayonnaise
- 1 tablespoon ketchup
- 1 tablespoon hot sauce, sriracha, or red chili sauce
- 1 teaspoon Dijon mustard
- 4 tablespoons butter, melted
- 4 cloves garlic, minced
- 2 tablespoons cilantro or parsley, minced
Instructions
- Marinate the chicken: In a medium bowl, thoroughly combine the chicken pieces with yogurt, oil, lemon juice, minced garlic, and all the spices including cumin, coriander, salt, garam masala, fenugreek, curry powder, chili powder, turmeric, and black pepper. Cover and refrigerate for at least 30 minutes, or up to 48 hours, to let the flavors deeply penetrate the chicken.
- Cook the chicken and vegetables: Heat a heavy-duty skillet or frying pan over medium-high heat. Add the marinated chicken along with the sliced onion and bell pepper. Cook on high heat for 8-10 minutes, stirring occasionally, until the chicken is thoroughly cooked and the vegetables are tender but still vibrant in color.
- Prepare sauces and preheat oven: In a small bowl, whisk together mayonnaise, ketchup, hot sauce, and Dijon mustard to create the slider sauce. In another bowl, whisk the melted butter with minced garlic and chopped cilantro or parsley to make the garlicky herb butter. Meanwhile, preheat your oven to 375°F (190°C) and line a 9×13-inch baking dish with foil, lightly greased with spray, oil, or butter.
- Assemble the sliders: Slice each slider bun horizontally in half. Place the bottom halves evenly in the prepared baking dish. Spread the slider sauce evenly on the inside of both the bottom and top buns. Spoon the cooked chicken and vegetable mixture over the bottom buns, then sprinkle generously with shredded mozzarella cheese. Place the top buns on each slider and gently press down. Brush the tops with the prepared garlic herb butter mixture.
- Bake the sliders: Bake the assembled sliders in the preheated oven at 375°F for about 15 minutes, or until the cheese is fully melted and the tops are coated with the butter and lightly golden. Remove from the oven and cover with foil to keep warm until serving.
Notes
- Store leftover sliders in an airtight container in the refrigerator for 2-3 days.
