Description

This refreshing cucumber sandwich recipe features a creamy blend of cream cheese, mayonnaise, sour cream, and fresh herbs spread over thinly sliced cucumbers layered on whole wheat or light rye bread. Perfect for tea parties, light lunches, or elegant appetizers, these sandwiches are easy to make and delightfully flavorful with a zesty lemon touch and fresh dill.

Ingredients

Scale

Creamy Spread

  • 8 ounces cream cheese, softened
  • ¼ cup mayonnaise
  • ¼ cup sour cream
  • ⅛ teaspoon onion powder
  • ¼ teaspoon black pepper
  • 1 teaspoon lemon zest
  • 2 tablespoons lemon juice
  • 2 tablespoons fresh dill, chopped

Other Ingredients

  • 1 English cucumber
  • 1 loaf whole wheat bread, or light rye bread

Instructions

  1. Prepare the creamy spread: In a medium bowl, thoroughly mix together softened cream cheese, mayonnaise, sour cream, onion powder, black pepper, lemon zest, lemon juice, and freshly chopped dill until smooth and well combined.
  2. Slice the cucumber: Using a mandoline, carefully slice the English cucumber into extra-thin slices to ensure delicate layering in the sandwiches.
  3. Spread the mixture on bread: Take each slice of bread and evenly spread a generous layer of the prepared cream cheese mixture on one side of the bread.
  4. Add cucumber slices: Arrange a layer of overlapping thin cucumber slices on top of the cream cheese spread on one slice of the bread. Make sure the cucumbers are evenly distributed.
  5. Assemble the sandwich: Place a second slice of bread on top of the cucumber layer, cream cheese side down, so that cucumbers are sandwiched between two cream cheese layers and the bread slices.
  6. Cut and shape sandwiches: Remove the crusts from the assembled sandwich to create a neat square. Then, cut the sandwich diagonally to form two triangular sandwiches.
  7. Repeat for remaining bread: Continue spreading, layering, and assembling the sandwiches until the entire loaf of bread and cream cheese mixture have been used.

Notes

  • Use a mandoline carefully to achieve uniformly thin cucumber slices that add a delicate texture.
  • For extra flavor, chill the sandwich ingredients before assembling to help the flavors meld better.
  • You can substitute fresh dill with fresh chives or basil for a different herbaceous note.
  • These sandwiches are best served fresh but can be kept covered in the refrigerator for up to 4 hours.
  • Opt for crustless bread slices to get the classic tea sandwich appearance and texture.
