Cookie Dough

  • 70 g Brown Sugar
  • 70 g Sugar
  • 115 g Butter, melted
  • 1 Egg
  • 1 tsp Vanilla Extract
  • 220 g Plain Flour
  • 1 tbsp Cornflour
  • ½ tsp Baking Soda
  • ½ tsp Baking Powder
  • ½ tsp Salt

Cream Cheese Frosting

  • 90 g Butter, softened
  • 90 g Cream Cheese
  • 250 g Icing Sugar

Instructions

  1. Prepare the Dough: In a large mixing bowl, combine the brown sugar, white sugar, and melted butter until well mixed and smooth. Add the egg and vanilla extract, then whisk to incorporate fully.
  2. Mix Dry Ingredients: In a separate bowl, sift together the plain flour, cornflour, baking soda, baking powder, and salt. This ensures even distribution and helps the cookies rise properly.
  3. Combine Wet and Dry: Gradually add the dry ingredients into the wet mixture, stirring gently until you have a soft dough. Avoid overmixing to keep the cookie texture tender.
  4. Shape Cookies: Using a cookie scoop or spoon, portion out the dough onto a baking tray lined with parchment paper. Leave enough space between each cookie as they will spread slightly.
