Cookie Dough
- 70 g Brown Sugar

- 115 g Butter, melted
- 1 Egg
- 1 tsp Vanilla Extract

- 1 tbsp Cornflour

- ½ tsp Baking Powder
- ½ tsp Salt
Cream Cheese Frosting
- 90 g Butter, softened
- 90 g Cream Cheese
- 250 g Icing Sugar
Instructions
- Prepare the Dough: In a large mixing bowl, combine the brown sugar, white sugar, and melted butter until well mixed and smooth. Add the egg and vanilla extract, then whisk to incorporate fully.
- Mix Dry Ingredients: In a separate bowl, sift together the plain flour, cornflour, baking soda, baking powder, and salt. This ensures even distribution and helps the cookies rise properly.
- Combine Wet and Dry: Gradually add the dry ingredients into the wet mixture, stirring gently until you have a soft dough. Avoid overmixing to keep the cookie texture tender.
- Shape Cookies: Using a cookie scoop or spoon, portion out the dough onto a baking tray lined with parchment paper. Leave enough space between each cookie as they will spread slightly.
- Bake the Cookies: Preheat the oven to 175°C (350°F). Bake the cookies for 10-12 minutes or until the edges are lightly golden but the center remains soft. Remove from the oven and allow them to cool on the tray for 5 minutes.
