- 1 cup (2 sticks) unsalted butter, softened
- 1 1/4 cups granulated sugar, plus extra for rolling
- 1/2 cup packed light brown sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 1/4 cups toffee bits (such as Heath bits o’ brickle)
Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large bowl, cream the butter, granulated sugar, and brown sugar together until light and fluffy, about 2-3 minutes.
- Beat in eggs one at a time, then add vanilla and mix until combined.
- In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Fold in the toffee bits until evenly distributed.
- Roll dough into 1 1/2-inch balls, then roll each ball in granulated sugar to coat.
- Place dough balls on prepared baking sheets, spacing 2 inches apart.
- Bake for 10–12 minutes, until edges are golden and centers are set but still soft.
- Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
- For extra crackle, roll dough twice in sugar before baking.
- Chill dough for 30 minutes for thicker cookies with more chew.
- Swap toffee bits for chocolate chips or chopped nuts for variation.
- Store in an airtight container for up to 5 days or freeze for up to 2 months.
