Description
Crème Caramel Flan is a classic, silky-smooth custard topped with a rich layer of golden caramel. This elegant dessert is perfect for special occasions or as a sweet indulgence after any meal.
Ingredients
Scale
- 1 cup granulated sugar (for caramel)
- 1/4 cup water (for caramel)
- 4 large eggs
- 2 large egg yolks
- 3/4 cup granulated sugar (for custard)
- 2 cups whole milk
- 1 cup heavy cream
- 1 tsp vanilla extract
- 1/4 tsp salt
Instructions
- Preheat oven to 325°F (160°C). Place a large baking dish in the oven for a water bath.
- To make the caramel, combine 1 cup sugar and 1/4 cup water in a saucepan over medium heat. Cook without stirring until the sugar melts and turns a deep amber color. Immediately pour the caramel into the bottom of a 9-inch round baking dish or into individual ramekins, swirling to coat the bottom evenly.
- In a large bowl, whisk together eggs, egg yolks, and 3/4 cup sugar until well combined but not frothy.
- In a saucepan, heat the milk, cream, salt, and vanilla over medium heat until just steaming. Gradually whisk the warm milk mixture into the eggs, a little at a time, to avoid curdling.
- Strain the custard mixture through a fine sieve into the caramel-lined dish or ramekins.
- Place the dish or ramekins in the prepared baking dish and pour hot water into the outer dish until it reaches halfway up the sides of the flan dish.
- Bake for 45-55 minutes (35-40 minutes for ramekins), until the center is just set and slightly jiggly.
- Remove from the water bath and cool completely. Refrigerate for at least 4 hours or overnight.
- To serve, run a knife around the edges and invert onto a plate so the caramel sauce flows over the custard.
Notes
- Do not overcook the caramel or it will taste bitter; remove from heat as soon as it turns amber.
- For a richer flavor, you can replace some milk with coconut milk or add a splash of coffee to the custard.
- Best served chilled, and it can be made up to two days ahead.
