Description

Crème Caramel Flan is a classic, silky-smooth custard topped with a rich layer of golden caramel. This elegant dessert is perfect for special occasions or as a sweet indulgence after any meal.


Ingredients

  • 1 cup granulated sugar (for caramel)
  • 1/4 cup water (for caramel)
  • 4 large eggs
  • 2 large egg yolks
  • 3/4 cup granulated sugar (for custard)
  • 2 cups whole milk
  • 1 cup heavy cream
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Instructions

  1. Preheat oven to 325°F (160°C). Place a large baking dish in the oven for a water bath.
  2. To make the caramel, combine 1 cup sugar and 1/4 cup water in a saucepan over medium heat. Cook without stirring until the sugar melts and turns a deep amber color. Immediately pour the caramel into the bottom of a 9-inch round baking dish or into individual ramekins, swirling to coat the bottom evenly.
  3. In a large bowl, whisk together eggs, egg yolks, and 3/4 cup sugar until well combined but not frothy.
  4. In a saucepan, heat the milk, cream, salt, and vanilla over medium heat until just steaming. Gradually whisk the warm milk mixture into the eggs, a little at a time, to avoid curdling.
  5. Strain the custard mixture through a fine sieve into the caramel-lined dish or ramekins.
  6. Place the dish or ramekins in the prepared baking dish and pour hot water into the outer dish until it reaches halfway up the sides of the flan dish.
  7. Bake for 45-55 minutes (35-40 minutes for ramekins), until the center is just set and slightly jiggly.
  8. Remove from the water bath and cool completely. Refrigerate for at least 4 hours or overnight.
  9. To serve, run a knife around the edges and invert onto a plate so the caramel sauce flows over the custard.

Notes

  • Do not overcook the caramel or it will taste bitter; remove from heat as soon as it turns amber.
  • For a richer flavor, you can replace some milk with coconut milk or add a splash of coffee to the custard.
  • Best served chilled, and it can be made up to two days ahead.
