Instructions
- Prepare and sear the chicken: Heat a pan over medium heat and add 1 tablespoon of olive oil. Season both sides of the chicken breasts with salt and pepper. When the pan is hot, add the chicken breasts and sear for 3-4 minutes on each side until golden brown. Remove the chicken from the pan and set aside. Cover the chicken with a splatter guard if available to keep warm.
- Make the pesto cream sauce: Let the pan cool for 1-2 minutes off the burner, then reduce the heat to low. Add the sun dried tomato pesto, minced garlic, red pepper flakes, and coconut cream to the pan. Stir constantly for 1-2 minutes until the mixture is fragrant and well combined.
