Instructions
- Prepare the Potatoes: Peel and cut the Yukon gold potatoes into 1-inch cubes to ensure even cooking. Place them in a large pot.
- Add Seasoning and Herbs: Add 1 tablespoon of kosher salt to the pot of potatoes. Bruise the garlic cloves slightly to release flavor and add them along with the fresh rosemary sprigs to the pot.
- Cook the Potatoes: Cover the potatoes with cold water and bring to a boil over medium-high heat. Cook until the potatoes are tender when pierced with a fork, about 15-20 minutes.
- Drain and Remove Herbs: Drain the potatoes thoroughly and remove the rosemary sprigs and garlic cloves.
- Mash the Potatoes: Return the potatoes to the pot or a mixing bowl. Add the softened butter and mash until smooth or desired consistency is reached.
- Add Cream and Season: Warm the heavy cream slightly, then gradually add to the mashed potatoes, mixing well to combine and achieve a creamy texture. Season with ½ teaspoon kosher salt and ¼ teaspoon black pepper, adjusting to taste.
- Serve: Serve immediately while warm, optionally garnishing with extra rosemary or a pat of butter for presentation.
