  • 1 large bell pepper, diced
  • 1 lb ground Italian sausage (chicken or pork)
  • 1 tbsp tomato paste
  • 1 tsp Italian seasoning
  • Pinch of red pepper flakes
  • 1/2 lb baby gold potatoes, quartered
  • Salt and pepper, to taste
  • 1 cup low sodium veggie or chicken broth
  • 1/2 cup heavy cream
  • 1 cup baby spinach
  • 1/4 cup parmesan cheese, or more to taste

Instructions

  1. Sauté Aromatics: Heat olive oil in a skillet over medium heat. Add diced onions and bell peppers and sauté for 4-5 minutes until they are softened and fragrant.
  2. Cook Sausage and Add Seasonings: Add the ground Italian sausage to the skillet, cooking and breaking it up with a spoon until it is no longer pink. Stir in the quartered potatoes, tomato paste, Italian seasoning, red pepper flakes, and salt and pepper. Let this mixture cook together for 1 minute to meld the flavors.
  3. Simmer with Broth and Cream: Pour in the low sodium broth and heavy cream. Cover the skillet with a lid and let it simmer over medium-low heat for 15-20 minutes, or until the potatoes are fork-tender and the flavors have blended well.
