- 12 oz (340g) penne or fusilli pasta
- 2 tablespoons olive oil
- 1 lb (450g) boneless, skinless chicken breast, cut into bite-sized pieces
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon Italian seasoning
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 cup broccoli florets
- 1 cup sliced bell peppers
- 1 cup zucchini, sliced
- 1 1/2 cups heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 2 tablespoons fresh parsley, chopped
Instructions
- Cook pasta according to package directions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium-high heat. Add chicken pieces, season with salt, pepper, and Italian seasoning, and cook until browned and fully cooked. Remove and set aside.
- In the same skillet, add onion and garlic; sauté for 2 minutes until fragrant.
- Add broccoli, bell peppers, and zucchini, and cook for 4-5 minutes until just tender.
- Stir in heavy cream and chicken broth. Bring to a simmer and cook for 3 minutes.
- Add Parmesan cheese and stir until the sauce thickens slightly.
- Return the chicken to the skillet along with the cooked pasta. Toss well to coat everything in the creamy sauce.
- Garnish with fresh parsley and serve warm.
Notes
- Use any vegetables you have on hand, such as spinach, mushrooms, or peas.
- For a lighter version, substitute half-and-half for heavy cream.
