Ingredients

  • 12 oz (340g) penne or fusilli pasta
  • 2 tablespoons olive oil
  • 1 lb (450g) boneless, skinless chicken breast, cut into bite-sized pieces
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup broccoli florets
  • 1 cup sliced bell peppers
  • 1 cup zucchini, sliced
  • 1 1/2 cups heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Cook pasta according to package directions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium-high heat. Add chicken pieces, season with salt, pepper, and Italian seasoning, and cook until browned and fully cooked. Remove and set aside.
  3. In the same skillet, add onion and garlic; sauté for 2 minutes until fragrant.
  4. Add broccoli, bell peppers, and zucchini, and cook for 4-5 minutes until just tender.
  5. Stir in heavy cream and chicken broth. Bring to a simmer and cook for 3 minutes.
  6. Add Parmesan cheese and stir until the sauce thickens slightly.
  7. Return the chicken to the skillet along with the cooked pasta. Toss well to coat everything in the creamy sauce.
  8. Garnish with fresh parsley and serve warm.

Notes

  • Use any vegetables you have on hand, such as spinach, mushrooms, or peas.
  • For a lighter version, substitute half-and-half for heavy cream.
