Chicken and Rice
- 1 lb boneless skinless chicken breasts
- 2 cups Minute rice (white or brown)
Soup Mixture
- 1 (10.5 oz) can cream of chicken soup
- 1 (10.5 oz) can cream of mushroom soup
- 1 (10.5 oz) can water
- 1 tbsp butter
- 1 envelope Lipton onion soup mix
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the casserole.
- Prepare Baking Dish: In a greased 9×13 inch baking dish, combine the cream of chicken soup, cream of mushroom soup, water, butter, and Lipton onion soup mix. Stir well to create the creamy mixture.
- Add Rice and Chicken: Pour the 2 cups of Minute rice evenly over the soup mixture in the baking dish. Place the boneless skinless chicken breasts on top of the rice in an even layer.
- Cover and Bake: Cover the baking dish tightly with aluminum foil to trap steam and bake in the preheated oven for 50-60 minutes, until the chicken is thoroughly cooked and the rice has absorbed the liquids.
- Check for Doneness: Carefully remove the foil and check that the chicken reaches an internal temperature of 165°F (74°C) and that the rice is tender.
