Description

Country Apple Fritter Muffins combine tender, spiced muffin batter with juicy diced Granny Smith apples and a sweet, crumbly cinnamon topping. Finished with a smooth vanilla glaze, these muffins offer the perfect balance of tart and sweet, ideal for breakfast or an afternoon treat.

Ingredients

Scale

For the Batter:

  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 eggs, room temperature
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1 1/2 cups diced Granny Smith apples, peeled

For the Topping:

  • 1 cup all-purpose flour
  • 1/3 cup light brown sugar
  • 3 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/3 cup unsalted butter, softened

For the Glaze:

  • 1 cup powdered sugar
  • 2 tablespoons whole milk
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare the Batter: In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the eggs one at a time, beating well after each addition, then stir in the vanilla extract. In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, kosher salt, ground cinnamon, and ground nutmeg. Gradually add the dry ingredients to the wet mixture, stirring just until combined. Fold in the peeled and diced Granny Smith apples to ensure they are evenly distributed throughout the batter.
  2. Make the Topping: In a separate bowl, combine the flour, light brown sugar, granulated sugar, and ground cinnamon. Add the softened butter and use a fork or pastry cutter to work the butter into the dry ingredients until the mixture resembles coarse crumbs. Set aside.
  3. Assemble the Muffins: Preheat your oven to 350°F (175°C) and grease or line a muffin tin with paper liners. Spoon the batter evenly into the muffin cups, filling each about three-quarters full. Sprinkle the crumbly topping generously over each muffin to create a crunchy, sweet crust.
  4. Bake: Place the muffin tin in the preheated oven and bake for 22 to 25 minutes or until a toothpick inserted into the center of a muffin comes out clean. Remove the muffins from the oven and allow them to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
  5. Prepare the Glaze: While the muffins cool, whisk the powdered sugar, whole milk, and vanilla extract together in a small bowl until smooth and pourable. Drizzle the glaze over the cooled muffins just before serving to add a sweet finish.

Notes

  • Use Granny Smith apples for their tart flavor and firm texture that holds up well in baking.
  • Make sure butter and eggs are at room temperature for better mixing and texture.
  • Do not overmix the batter to keep muffins tender and moist.
  • The topping adds a delightful crunch and sweetness reminiscent of an apple fritter.
  • Allow muffins to cool before glazing to prevent the glaze from melting too much.
  • These muffins can be stored in an airtight container at room temperature for up to 3 days or frozen for up to 1 month.
