Ingredients
Scale
Dry Ingredients
- 3 cups all-purpose flour
- 1 1/2 tablespoons baking powder
- 1 1/4 teaspoons salt
Wet Ingredients
- 1 1/2 cups milk (any kind)
- 1 cup cottage cheese (2% fat preferred)
Instructions
- Preheat Oven and Prepare Pan: Preheat your oven to 375°F (190°C) and line a 9×5 loaf pan with parchment paper to prevent sticking and ensure easy removal after baking.
- Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, baking powder, and salt thoroughly. Then, sift the mixture through a fine mesh sieve into another large bowl to ensure a light, airy base for your bread.
- Add Wet Ingredients: Gently stir in the milk and cottage cheese using a spatula until the mixture is just combined. The dough will be thick, sticky, and spreadable – avoid overmixing to keep the bread tender.
- Transfer to Pan: Spoon the sticky dough into the prepared loaf pan and level the top with a spatula for an even shape.
- Bake the Bread: Bake in the preheated oven for 70 minutes or until a toothpick inserted into the center comes out clean or with just a few moist crumbs. If the top browns too quickly, loosely cover it with foil or parchment paper to prevent burning.
- Cool the Bread: Remove the loaf from the oven and let it cool in the pan for 5 minutes. Then transfer it onto a wire rack to cool completely, about 1 hour, to allow the crumb to set properly.
- Slice and Serve: Using a serrated knife, cut the bread into 10 slices. Enjoy the bread fresh, toasted, or as a base for your favorite sandwich fillings.
Notes
- Do not overmix the dough after adding the wet ingredients to keep the bread tender.
- If the crust browns too fast during baking, cover the loaf loosely with foil to prevent burning.
- Allow the bread to cool completely before slicing to ensure clean slices and proper texture.
- This bread is best enjoyed fresh but can also be toasted or frozen for later use.
