Instructions
- Boil the Eggs: Place the eggs in a single layer in a saucepan and cover them with cold water by about an inch. Bring the water to a boil over medium-high heat. Once boiling, remove from heat, cover the pan with a lid, and let the eggs sit for 10-12 minutes to hard boil.
- Cool and Peel: Drain the hot water and transfer the eggs to a bowl of ice water to cool for at least 5 minutes. Once cool, gently tap and peel the eggs, rinsing off any shell pieces.
- Prepare the Filling: Slice the peeled eggs in half lengthwise. Carefully scoop out the yolks into a small bowl, placing the whites on a serving plate. Mash the yolks with a fork until smooth.
- Mix the Filling: Add mayonnaise, Dijon mustard, apple cider vinegar, kosher salt, and ground black pepper to the mashed yolks. Stir well until the mixture is creamy and evenly combined. Adjust seasoning to taste.
- Fill the Egg Whites: Spoon or pipe the yolk mixture back into the hollowed egg whites, filling each half generously.
- Garnish and Serve: Lightly sprinkle paprika over the filled eggs for a classic touch of color and flavor. Chill in the refrigerator before serving for best taste.
