Instructions

  3. Cream butter and sugars: In a large mixing bowl, use an electric mixer to cream the softened unsalted butter, creamy peanut butter, granulated sugar, and light brown sugar until the mixture is smooth and fluffy.
  4. Add egg and vanilla: Beat in the large egg and vanilla extract until well combined, scraping down the sides of the bowl as needed.
  5. Combine dry and wet: Gradually add the dry ingredients to the wet ingredients, mixing on low speed until the dough forms and is fully combined.
  6. Form cookie dough balls: Roll the dough into 1-inch balls, then gently roll each ball in additional granulated sugar to coat evenly.
  7. Arrange on baking sheets: Place the sugar-coated dough balls on the prepared baking sheets about 2 inches apart to allow for spreading.
