Delicious and easy Chocolate Peanut Butter No Bake Cookies that combine rich cocoa, creamy peanut butter, and hearty oats. These no-bake treats come together quickly on the stovetop, making them perfect for a sweet snack or dessert without needing to turn on the oven.

Ingredients

Scale

Wet Ingredients

  • 1/4 cup (4 Tbsp; 56g) unsalted butter
  • 1/2 cup (120ml) milk
  • 2/3 cup (170g) creamy peanut butter
  • 1 Tablespoon (15ml) pure vanilla extract

Dry Ingredients

  • 1 and 1/2 cups (300g) granulated sugar
  • 1/4 cup (21g) natural unsweetened or dutch-process cocoa powder
  • 3 cups (255g) old-fashioned whole rolled oats or quick oats
  • 1/8 teaspoon salt

Instructions

  1. Combine Butter, Sugar, Milk, and Cocoa Powder: In a medium saucepan over medium heat, combine the unsalted butter, granulated sugar, milk, and cocoa powder. Stir continuously until the mixture reaches a full rolling boil.
  2. Boil the Mixture: Allow the mixture to boil for exactly 1 minute while stirring constantly to prevent burning. This step is crucial as it activates the sugar mixture to set properly.
  3. Add Peanut Butter and Vanilla: Remove the saucepan from heat and immediately stir in the creamy peanut butter and pure vanilla extract. Mix until the peanut butter is fully melted and incorporated.
  4. Stir in Oats and Salt: Add the oats and salt to the mixture, stirring thoroughly to ensure all oats are coated evenly with the chocolate peanut butter mixture.
  5. Form Cookies: Using a spoon or cookie scoop, drop spoonfuls of the mixture onto parchment paper or a silicone mat. Shape them quickly if desired as the mixture will start to set soon.
  6. Cool and Set: Allow the cookies to cool at room temperature for at least 30 minutes or until they are firm and set. For faster setting, you can refrigerate them.

Notes

  • Make sure to boil the sugar mixture for a full minute to ensure the cookies set properly.
  • You can use either old-fashioned rolled oats or quick oats; old-fashioned will give a chewier texture.
  • If you prefer chunkier cookies, use chunky peanut butter instead of creamy.
  • Store cookies in an airtight container at room temperature for up to 5 days or refrigerated for up to 2 weeks.
  • For a vegan version, substitute butter with coconut oil and use a plant-based milk alternative.
