- 1/4 cup (21g) natural unsweetened or dutch-process cocoa powder
- 3 cups (255g) old-fashioned whole rolled oats or quick oats
- 1/8 teaspoon salt
Instructions
- Combine Butter, Sugar, Milk, and Cocoa Powder: In a medium saucepan over medium heat, combine the unsalted butter, granulated sugar, milk, and cocoa powder. Stir continuously until the mixture reaches a full rolling boil.
- Boil the Mixture: Allow the mixture to boil for exactly 1 minute while stirring constantly to prevent burning. This step is crucial as it activates the sugar mixture to set properly.
- Add Peanut Butter and Vanilla: Remove the saucepan from heat and immediately stir in the creamy peanut butter and pure vanilla extract. Mix until the peanut butter is fully melted and incorporated.
- Stir in Oats and Salt: Add the oats and salt to the mixture, stirring thoroughly to ensure all oats are coated evenly with the chocolate peanut butter mixture.
- Form Cookies: Using a spoon or cookie scoop, drop spoonfuls of the mixture onto parchment paper or a silicone mat. Shape them quickly if desired as the mixture will start to set soon.
- Cool and Set: Allow the cookies to cool at room temperature for at least 30 minutes or until they are firm and set. For faster setting, you can refrigerate them.
