- 1 packet taco seasoning
- 1/4 cup water
- 1 can (10 oz) Rotel diced tomatoes and green chilies
- 8 oz (225g) Velveeta or cheddar cheese, cubed
- 8 small taco shells or tortillas
- 1/2 cup shredded lettuce
- 1/2 cup diced tomatoes (optional)
- 1/4 cup sour cream (optional)
Instructions
- In a large skillet over medium heat, cook the ground beef until browned and fully cooked. Drain excess fat.
- Add taco seasoning and water, stirring until the meat is evenly coated. Cook for 2-3 minutes.
- Add Rotel tomatoes and cubed cheese. Stir frequently until the cheese is fully melted and the mixture is creamy.
- Warm taco shells according to package directions.
- Spoon the cheesy beef mixture into taco shells and top with shredded lettuce, diced tomatoes, and sour cream if desired.
Notes
- For extra spice, use hot Rotel and add jalapeño slices.
- Swap ground beef with ground turkey or chicken for a lighter version.
