Description

  • 1 packet taco seasoning
  • 1/4 cup water
  • 1 can (10 oz) Rotel diced tomatoes and green chilies
  • 8 oz (225g) Velveeta or cheddar cheese, cubed
  • 8 small taco shells or tortillas
  • 1/2 cup shredded lettuce
  • 1/2 cup diced tomatoes (optional)
  • 1/4 cup sour cream (optional)

Instructions

  1. In a large skillet over medium heat, cook the ground beef until browned and fully cooked. Drain excess fat.
  2. Add taco seasoning and water, stirring until the meat is evenly coated. Cook for 2-3 minutes.
  3. Add Rotel tomatoes and cubed cheese. Stir frequently until the cheese is fully melted and the mixture is creamy.
  4. Warm taco shells according to package directions.
  5. Spoon the cheesy beef mixture into taco shells and top with shredded lettuce, diced tomatoes, and sour cream if desired.
