Instructions
- Spread butter on one side of each bread slice.
- On the unbuttered side, spread cottage or ricotta cheese evenly.
- Sprinkle shredded cheese over the cottage cheese layer.
- Add salt, pepper, and any optional herbs or veggies you like.
- Close the sandwich with the other bread slice, buttered side out.
- Heat a skillet over medium heat and place the sandwich on it.
- Cook until golden brown and crispy, about 3-4 minutes per side, pressing gently with a spatula.
- Remove from heat, slice, and serve warm.
