- 1 teaspoon vanilla extract
- For the apple layer:
- 2 large apples, peeled and finely chopped
- 2 tablespoons granulated sugar
- 1/2 teaspoon cinnamon
- For the streusel topping:
- 1 cup packed brown sugar
- 1 cup all-purpose flour
- 1/2 cup quick oats
- 1/2 cup unsalted butter, softened
- For the topping:
- 1/2 cup caramel sauce (store-bought or homemade)
Instructions
- Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper and set aside.
- Make the crust: In a bowl, combine flour and brown sugar. Cut in the butter using a pastry cutter or fork until crumbly. Press mixture firmly into the bottom of the prepared pan. Bake for 15 minutes.
- Make the cheesecake layer: In a large bowl, beat cream cheese and sugar until smooth. Add eggs and vanilla; mix until combined. Pour over the slightly cooled crust.
- Prepare the apple layer: In a small bowl, toss the chopped apples with sugar and cinnamon. Sprinkle evenly over the cheesecake layer.
- Make the streusel: In a medium bowl, mix brown sugar, flour, oats, and butter until crumbly. Sprinkle over the apple layer.
- Bake for 35–40 minutes or until the center is set and the top is golden brown. Cool completely in the pan.
- Drizzle with caramel sauce before serving. Chill in the fridge for at least 2 hours for clean slices.

- Let bars chill completely before slicing for best texture.
