  • 1 cup packed brown sugar
  • 1 cup all-purpose flour
  • 1/2 cup quick oats
  • 1/2 cup unsalted butter, softened
  • For the topping:
  • 1/2 cup caramel sauce (store-bought or homemade)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper and set aside.
  2. Make the crust: In a bowl, combine flour and brown sugar. Cut in the butter using a pastry cutter or fork until crumbly. Press mixture firmly into the bottom of the prepared pan. Bake for 15 minutes.
  3. Make the cheesecake layer: In a large bowl, beat cream cheese and sugar until smooth. Add eggs and vanilla; mix until combined. Pour over the slightly cooled crust.
  4. Prepare the apple layer: In a small bowl, toss the chopped apples with sugar and cinnamon. Sprinkle evenly over the cheesecake layer.
  5. Make the streusel: In a medium bowl, mix brown sugar, flour, oats, and butter until crumbly. Sprinkle over the apple layer.
  6. Bake for 35–40 minutes or until the center is set and the top is golden brown. Cool completely in the pan.
  7. Drizzle with caramel sauce before serving. Chill in the fridge for at least 2 hours for clean slices.
