Description

Caprese Stuffed Avocados are a quick and nutritious twist on the classic Italian salad. Creamy avocados are filled with juicy cherry tomatoes, fresh mozzarella, and fragrant basil, then drizzled with balsamic glaze for a refreshing and satisfying low-carb dish.


Ingredients

  • 3 ripe avocados, halved and pitted
  • 1 cup cherry tomatoes, halved
  • 3/4 cup mini mozzarella balls (bocconcini), halved
  • 1/4 cup fresh basil leaves, chopped
  • 2 tablespoons balsamic glaze
  • 1 tablespoon olive oil
  • Salt and black pepper to taste

Instructions

  1. In a medium bowl, combine the cherry tomatoes, mozzarella balls, chopped basil, olive oil, salt, and pepper. Toss gently to coat.
  2. Scoop out a small amount of avocado flesh to create more room for the filling if needed (optional). Dice the scooped avocado and add it to the tomato mixture.
  3. Spoon the Caprese mixture into each avocado half, filling them generously.
  4. Drizzle with balsamic glaze before serving.
  5. Serve immediately as a fresh appetizer, lunch, or light dinner.

Notes

  • Use ripe but firm avocados to hold the filling without collapsing.
  • You can substitute mozzarella balls with diced fresh mozzarella.
  • Drizzle with extra virgin olive oil and add a touch of garlic for extra flavor.
