Ingredients

- 3 ripe avocados, halved and pitted
- 1 cup cherry tomatoes, halved
- 3/4 cup mini mozzarella balls (bocconcini), halved
- 1/4 cup fresh basil leaves, chopped
- 2 tablespoons balsamic glaze
- 1 tablespoon olive oil
- Salt and black pepper to taste
Instructions
- In a medium bowl, combine the cherry tomatoes, mozzarella balls, chopped basil, olive oil, salt, and pepper. Toss gently to coat.
- Scoop out a small amount of avocado flesh to create more room for the filling if needed (optional). Dice the scooped avocado and add it to the tomato mixture.
- Spoon the Caprese mixture into each avocado half, filling them generously.
- Drizzle with balsamic glaze before serving.
- Serve immediately as a fresh appetizer, lunch, or light dinner.
Notes
- Use ripe but firm avocados to hold the filling without collapsing.
- You can substitute mozzarella balls with diced fresh mozzarella.
- Drizzle with extra virgin olive oil and add a touch of garlic for extra flavor.
