Instructions

  1. Prepare the candy canes: Place the mini candy canes in a food processor or blender and pulse until they become small, coarse pieces similar to crushed candy. Set aside.
  2. Melt the chocolate: In a microwave-safe bowl, heat the chocolate chips in 30-second intervals, stirring well between each, until fully melted and smooth. Alternatively, melt the chocolate in a double boiler over simmering water, stirring until smooth.
  3. Dip the marshmallows: Holding each large marshmallow by a toothpick or dipping fork, dip it into the melted chocolate, coating about three-quarters of the marshmallow. Allow any excess chocolate to drip off.
  4. Coat with crushed candy canes: Immediately after dipping in chocolate, roll or sprinkle the marshmallow with the crushed mini candy canes to coat the chocolate portion evenly.
