Instructions
- Prepare the Garlic Butter: In a small pan over low heat, melt the butter and olive oil together. Add the minced garlic and a sprinkle of salt, cooking gently until the garlic is fragrant but not browned. Stir in the fresh parsley, then remove from heat and set aside to cool.
- Activate the Yeast: In a bowl, combine the warm milk, active dry yeast, and honey. Stir gently and let it sit for about 5-10 minutes until it becomes frothy, indicating the yeast is active.
- Make the Dough: In a large mixing bowl, whisk together the all-purpose flour, bread flour, milk powder (if using), salt, and sugar. Add the softened butter, egg yolks, and the yeast mixture. Mix until a soft dough forms, then knead on a lightly floured surface for about 8-10 minutes until smooth and elastic.
- First Proofing: Place the dough in a greased bowl, cover with a clean cloth or plastic wrap, and let it rise in a warm place for about 1 to 1.5 hours, or until doubled in size.
- Shape the Rolls: Punch down the dough and roll it out into a rectangle on a floured surface. Brush a generous layer of the prepared garlic butter over the dough. Spread the shredded mozzarella evenly on top. Roll the dough tightly into a log, then cut into individual rolls.
- Second Proofing: Place the rolls in a greased baking dish, cover, and let them proof for another 30-45 minutes, or until puffed up.
