Dough

  • 200 grams all-purpose flour
  • 50 grams bread flour
  • 20 grams milk powder (optional)
  • 25 grams butter, softened
  • 2 egg yolks
  • 1 1/2 teaspoon salt
  • 1 tablespoon sugar

Filling

  • 200 grams mozzarella cheese, shredded
  • Garlic butter made previously

Egg Wash

  • 1 egg, beaten

Instructions

  1. Prepare the Garlic Butter: In a small pan over low heat, melt the butter and olive oil together. Add the minced garlic and a sprinkle of salt, cooking gently until the garlic is fragrant but not browned. Stir in the fresh parsley, then remove from heat and set aside to cool.
  2. Activate the Yeast: In a bowl, combine the warm milk, active dry yeast, and honey. Stir gently and let it sit for about 5-10 minutes until it becomes frothy, indicating the yeast is active.
  3. Make the Dough: In a large mixing bowl, whisk together the all-purpose flour, bread flour, milk powder (if using), salt, and sugar. Add the softened butter, egg yolks, and the yeast mixture. Mix until a soft dough forms, then knead on a lightly floured surface for about 8-10 minutes until smooth and elastic.
  4. First Proofing: Place the dough in a greased bowl, cover with a clean cloth or plastic wrap, and let it rise in a warm place for about 1 to 1.5 hours, or until doubled in size.
  5. Shape the Rolls: Punch down the dough and roll it out into a rectangle on a floured surface. Brush a generous layer of the prepared garlic butter over the dough. Spread the shredded mozzarella evenly on top. Roll the dough tightly into a log, then cut into individual rolls.
