Ingredients
Scale
Spice Mix
- 1 ½ teaspoons smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried oregano or mixed herbs
- ½ teaspoon salt
- ¼ teaspoon black pepper
Bowls
- 2–3 medium potatoes, cut into chunks
- 2 tablespoons olive oil, divided
- 500 grams lean beef mince
- Lettuce, shredded
- Cheese, dairy-free or regular, shredded or sliced
- Pickle slices
Burger Sauce
- 4 tablespoons mayonnaise
- 1 tablespoon ketchup
- 1 teaspoon Dijon or yellow mustard
- 1 teaspoon pickle juice from the jar of pickles
- ½ teaspoon garlic powder
- ½ teaspoon smoked paprika
Instructions
- Prepare Spice Mix: In a small bowl, combine smoked paprika, garlic powder, onion powder, dried oregano, salt, and black pepper. Set aside the seasoning mix for beef and sauce.
- Roast Potatoes: Preheat oven to 200°C (400°F). Toss the potato chunks with 1 tablespoon of olive oil and a pinch of salt. Spread them out on a baking sheet in a single layer. Roast for 25-30 minutes, turning halfway through, until golden and crispy on the outside and tender within.
- Cook Beef Mince: Heat a skillet over medium-high heat and add the remaining 1 tablespoon of olive oil. Add the lean beef mince and sprinkle half of the prepared spice mix over it. Cook, breaking the meat apart with a spoon, until fully browned and cooked through, about 8-10 minutes. Drain excess fat if necessary.
- Make Burger Sauce: In a small bowl, mix together mayonnaise, ketchup, mustard, pickle juice, garlic powder, and smoked paprika until smooth and well combined.
- Assemble Burger Bowls: In serving bowls, start with a base of roasted potatoes, then top with cooked seasoned beef mince. Add shredded lettuce, cheese slices or shreds, and pickle slices. Drizzle the homemade burger sauce over the top to taste.
- Serve: Enjoy immediately while potatoes are warm and beef is freshly cooked. This dish pairs well with a simple side salad for a nutritious meal.
Notes
- You can substitute the potatoes with sweet potatoes if preferred.
- The burger sauce can be made ahead and refrigerated for up to 3 days.
- For a vegetarian version, replace beef mince with cooked lentils or plant-based mince.
- Adjust the spices in the mix according to your heat preference, adding chili powder if desired.
- Use dairy-free cheese and mayonnaise to make this recipe vegan-friendly, although the beef would need substituting.
