Instructions

  1. Prepare the Bubblegum Mint Infused Simple Syrup: In a small saucepan, combine 10 pieces of bubble gum, 2 tablespoons of corn syrup, and about 1 cup of water. Heat gently over low heat, stirring often until the gum dissolves completely and the mixture is syrupy. If desired, add a few drops of pink food coloring to enhance the bubblegum effect. Strain the syrup to remove any gum residue and let it cool.
  2. Muddle the Mint: Place a handful of fresh mint leaves into a sturdy glass or cocktail shaker. Gently muddle the mint with a muddler to release its aromatic oils without tearing the leaves.
  3. Mix the Cocktail: Add 3 ounces of the cooled bubblegum mint infused simple syrup, 3 ounces of rum, and 3 ounces of fresh lime juice into the glass or shaker with the muddled mint. Stir or shake lightly to blend the flavors.
  4. Add Carbonation: Pour 6 ounces of carbonated soda water into the mixture and gently stir to combine without losing the bubbles.
  5. Prepare the Glass Rim: Lightly moisten the rim of your serving glass and dip it into pink colored sugar to coat the rim for a festive touch.
