Description

Bobby Flay’s Salisbury Steak is a comfort food classic elevated with a rich mushroom and onion gravy. Juicy ground beef patties are perfectly seasoned and seared, then simmered in a savory sauce that’s perfect over mashed potatoes or rice.

Ingredients

Scale
  • 1 1/2 pounds ground beef (80/20 blend)
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 large egg
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 medium onion, thinly sliced
  • 8 oz mushrooms, sliced
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups beef broth
  • 1 tablespoon tomato paste
  • 1 tablespoon Worcestershire sauce (for gravy)

Instructions

  1. In a large bowl, combine the ground beef, breadcrumbs, milk, egg, Worcestershire sauce, Dijon mustard, onion powder, garlic powder, salt, and pepper. Mix gently until just combined.
  2. Form into 4 to 6 oval patties and set aside.
  3. Heat olive oil in a large skillet over medium-high heat. Sear the patties on both sides until browned, about 3–4 minutes per side. Remove from skillet and set aside.
  4. In the same skillet, melt butter and add sliced onions and mushrooms. Cook until softened and golden, about 7–10 minutes.
  5. Stir in the flour and cook for 1–2 minutes to form a roux.
  6. Whisk in beef broth, tomato paste, and Worcestershire sauce. Bring to a simmer and cook until thickened, about 5 minutes.
  7. Return the patties to the skillet, spoon sauce over the top, cover, and simmer for 10–15 minutes or until fully cooked.
  8. Serve hot with mashed potatoes, noodles, or rice.

Notes

  • Do not overmix the beef mixture to keep the patties tender.
  • Use a cast iron skillet for better searing.
  • Add a splash of heavy cream to the gravy for extra richness if desired.
