Bobby Flay’s Salisbury Steak is a comfort food classic elevated with a rich mushroom and onion gravy. Juicy ground beef patties are perfectly seasoned and seared, then simmered in a savory sauce that’s perfect over mashed potatoes or rice.

- 1 1/2 pounds ground beef (80/20 blend)
- 1/2 cup breadcrumbs
- 1/4 cup milk
- 1 large egg
- 1 tablespoon Worcestershire sauce
- 1 teaspoon Dijon mustard
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 medium onion, thinly sliced
- 8 oz mushrooms, sliced
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 2 cups beef broth
- 1 tablespoon tomato paste
- 1 tablespoon Worcestershire sauce (for gravy)
Instructions
- In a large bowl, combine the ground beef, breadcrumbs, milk, egg, Worcestershire sauce, Dijon mustard, onion powder, garlic powder, salt, and pepper. Mix gently until just combined.
- Form into 4 to 6 oval patties and set aside.
- Heat olive oil in a large skillet over medium-high heat. Sear the patties on both sides until browned, about 3–4 minutes per side. Remove from skillet and set aside.
- In the same skillet, melt butter and add sliced onions and mushrooms. Cook until softened and golden, about 7–10 minutes.
- Stir in the flour and cook for 1–2 minutes to form a roux.
- Whisk in beef broth, tomato paste, and Worcestershire sauce. Bring to a simmer and cook until thickened, about 5 minutes.
- Return the patties to the skillet, spoon sauce over the top, cover, and simmer for 10–15 minutes or until fully cooked.
- Serve hot with mashed potatoes, noodles, or rice.
Notes
- Do not overmix the beef mixture to keep the patties tender.
- Use a cast iron skillet for better searing.
- Add a splash of heavy cream to the gravy for extra richness if desired.
